Commercial anthology books are printed in much greater numbers than doujinshi, and are far more accessible too, being sold in mainstream Japanese bookstores and many of those stores' overseas branches (including several in North America; many of the anthology books in my collection were purchased in Chicago, Los Angeles and San Diego). They also turn up frequently on the Internet auction site eBay.
Unfortunately, the problem that many non-Japanese sellers have in identifying a doujinshi's creator is magnified a dozen times or more with an anthology, which gathers work by a wide variety of circles. The book credits each artist by name (and sometimes by circle too)--but if you can't read it, it's difficult to know.
So here's a section of all the commercial and non-commercial Gundam Wing anthologies that I know of. Each book's covers and spine are pictured, with a list of the book's publisher and ISBN number (where applicable), size, number of pages, contributing circles, contributors' pen names (as published, usually family name before given name), and the page numbers of their contributions, with a notation if it's not manga or a black-and-white illustration (i.e. "cover," "color pinup," "text novel"). There's a section for each publisher's series of commercial anthology books, while the non-commercial anthologies have a section of their own.
If you have a commercial or non-commercial Gundam Wing anthology that I'm not aware of, please let me know!
There are also a few commercial books that have Gundam Wing stories by just one circle or doujinshi artist. I've given those books a section of their own:
Finally, there's an alphabetical cross-reference chart of circle names, with a listing of the anthologies their work appears in:
